    Yeah, but at least you have a Red Lobster in Pennsylvania. We poor Alaskans must make due with what we can catch.

    At least you know it's fresh!

    I almost wish I lived in Mexico so I could catch my own fresh-from-the-sea cheese enchiladas.

    Ah, but sadly enough there aren't much jalapenos grown locally, I'm afraid. Oh well, I can always pick those up at the store.

    Default Mexican food

    [quote=Alaskan
    Anyone else just love jalapenos and Mexican food on this forum?[/QUOTE]

    It's the favorite food at our house. I spent a while living in Mexico in my teens and developed a real taste for south-of-the-border cooking. I'm fortunate that this area of Washington has such a high ratio of Spanish, Hispanic and South American people. I don't know the exact figures but it feels like about a third. That translates into all sorts of hole-in-the-wall authentic restaurants/shops. In fact the local bait & tackle shop has a two table diner in the back and serves the BEST burritos.

    One of the local Spanish churches seems to do a fund-raiser supper every couple of months for one of the private schools. They use the schools kitchens and eating areas. For $5 you can eat just about all the tamales, enchildas, spanish rice, hominy, etc. that you could want.

    Anyway, didn't mean to go on so. If you are ever in the area though, let me know. We'd be happy to take you somewhere good!!!!

    One thing I would like to do with my husband is drive on the "Alaskan highway" starting up through MI, then into Canada and over. I have always wanted to visit Alaska. We are roadtrip people, definitely, lots of food wrappers on the floor, NPR stations, smoked fish in Canada, beef jerky, Twizzlers....

    When my degree is actually finished, as in all credits in, I think I would like to camp out for the weekend in the nice cool weather, with a toasty campfire and just relax with some good books and music.

    Although if money were no object, I'd probably fly to the tropics and sit on the beach in the shade for a month, sip fruity drinks and eaty spicy foods, and still read that good book.

    Just fantasizing...and procrastinating a bit on my course work this morning...

    LOL, just saw this. I did finish my computer apps course last night. Sent in the last assignment, and now I just have to take the exam when it arrives at the college where I have it proctored!!

    That leaves coursework for the others but not so much. Four assignments, (submitted 2 at a time) and one final exam for one sociology, and 6 assignments, (3 submissions) and 2 exams for the other sociology, then that really is it.

    I am in touch with a Masters in Music Education online program at Boston University, already, so that's motivation!

    I miss taking tests...I miss the anxiety, the anticipation, the thudding heart before I see my score, and the thrill of success, and the celebrating afterward.

    Haven't heard back yet on my 2 dsst tests, but hoping it will be fine. If not, I may be cramming for two more cleps. I'm very excited about seeing these big envelopes everybody talks about!
